Until the 1970s the historic cellar was used by the Castle’s successive owners to produce the wines made from grapes harvested in their vineyards. Nowadays, it is an impressive wine cellar holding a noteworthy collection of regional producers’ wines, well preserved and aging in optimum conditions. By reservation, small groups can enjoy expertly-conducted wine tastings or pre-dinner aperitivo served here.
These vineyards, which are still in production, are part of the aforementioned UNESCO World Heritage designation. They produce an important cru (geographical sub-region) of Barolo wine, called Sottocastello di Novello. This indicates that Barolo carrying this declaration is produced from nebbiolo grapes grown on the slopes under the Castello di Novello.
